baked stuffed onions

if you are looking for an easy side dish that would taste great with chicken, beef or fish, here is one that i would recommend.  i found this recipe in the everyday food collection by Martha.  the prep time is about 30 minutes and the bake time about 30 minutes as well for nice tender onions.

i made two onions, one for each of us, however; go ahead and increase the recipe for your dinner party.  i am certain that everyone will love the taste and flavor from this dish.  to make the recipe, begin by preheating the oven to 425 degrees.  peel and hollow out the inside of an number of yellow onions.

place in a ceramic baking dish and pour about 1/4 cup of low sodium chicken broth around the onions.  cover the dish with foil and bake for about 20 minutes.  remove the onions from the dish, and pour off the hot liquid.  return the onions to the dish and add the filling.

while the onions are baking, cook 4 slices of bacon oven medium heat in a skillet.  make sure the bacon is crisp and then chop the bacon in the skillet and add chopped onions saved from the centers of the large onions.  cook for about 10 to 15 minutes until onions are soft and brown.  remove from stove top and mix in about 1/2 cup of panko breadcrumbs, 1/2 cup of shredded Swiss or Gruyere cheese and 2 tablespoons parsley either fresh or dried, salt and pepper.  stir. 

fill the onions with this mixture and sprinkle the tops with more cheese. i put the extra filling around the onions in the dish.   bake uncovered until golden brown on the top. this will take another 20 to 25 minutes.  serve as a side dish.  delicious !  the crispy filling is so tasty and the onions are so mild.
