baked cod with leeks

in the fall months, i love to serve different types of vegetables with main dishes.  here, i have taken my traditional baked cod recipe and paired it with sliced leeks.

leeks are a wonderful option to onions and provide that great green color to contrast with white fish.

after baking, these leeks were tender and delicious.  this was a very flavorful dish served with herbed bread.
